Garlic Essential Oil

Garlic essential oil is obtained by the steam distillation of bulbs of Allium sativum. The oil is a pale yellow to brownish-yellow liquid with a characteristic alliaceous odor. The oil consists mainly of allyl sulfides. The product is mainly used in flavor applications.

The essential oil of garlic is a product of the heating process during hydro-distillation and it is mainly composed of allyl and methyl sulfide derivatives derived by the decomposition of allicin. Due to the lack of allicin in its chemical composition, garlic oil has been neglected by scientists for a long time.
